Brown butter banana bread
The usual way to use three blackening bananas, with the butter browned first for a nutty depth. Keeps for four days and freezes sliced.
Serves 10 · Prep 15 min · Cook 65 min
Ingredients
- 115 g butter
- 3 very ripe bananas, mashed
- 150 g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 190 g plain flour
- 1 tsp baking soda
- 1/2 tsp fine salt
- 60 g walnuts, chopped (optional)
Steps
- Heat the oven to 175°C (350°F) and line a 23 cm loaf tin. Melt the butter in a light pan and keep cooking, swirling, until the milk solids turn amber and it smells nutty; pour into a bowl to cool slightly.
- Whisk the bananas, sugar, egg and vanilla into the butter. Fold in the flour, baking soda and salt until just combined, then the walnuts.
- Bake 55–60 minutes until a skewer comes out clean. Cool in the tin ten minutes, then on a rack.
